Any cook in the kitchen or any chef at a resturant will do the same thing. They will tinker with a recipe until it produces the most appetizing, pleasing result. Making a food tastier is not done with malicious intent. It is done so that more people will enjoy the food and ask for it more often.

The doctor in this piece was unable to resist the chocolate-chip cookies precisely because he bought them with the explicit intent of NOT eating them. He was setting himself up for failure. His preoccupation with not eating the cookies only made them more appetizing to him. This is not the food manufacturers fault, it is the doctor's for buying them in the first place.

in the nyt article, Dr. Kessler also mentioned the fact that the foods wre designed to be addictive, which is something that most cooks probably don't know how to do.
